- Livarot earned its nickname "the colonel" from the reed or paper strips wrapped around its rind, resembling the stripes on a military uniform.
- Beaufort, nicknamed "the prince of Gruyères," is made high in the mountains and aged in cool cellars that give it its characteristic fruity flavour.
- Salers can only be produced between April 15th and November 15th, when cows graze on the natural mountain pastures of Auvergne.
