- Serbian Pule, made from donkey's milk, takes about 25 litres of milk to produce a single kilo of cheese, making it one of the most expensive cheeses in the world.
- Sardinian Casu Marzu owes its creamy texture to live fly larvae that break down the curd during fermentation; it's banned from sale but still eaten traditionally.
- Norwegian Gjetost isn't a curd cheese at all: it's made by slowly cooking whey, whose sugars caramelise to give it its brown colour and sweet taste.
